White chocolate recipes Well I never knew just how many white chocolate fanatics there was out there until you all started asking for white chocolate recipes.

I have also now added a white chocolate version of my best chocolate cake recipe and like the dark chocolate cake I have started including variations - coconut white chocolate and raspberry white chocolate are just the beginning.

You may remember me telling you in the last edition of Chocolate Inspirations that I was in the middle of adding to my chocolate strawberry collection. Well I did manage to get them done and here they are! My cute little Bunnies and Mice.

I Need Your Help!

Ok now I need your help.

I want to expand my site to include chocolate tours of the world. So no matter where you live if there is a chocolate tour or museum or even a really good chocolate making class that you know of please share it with me so that I can include it in my pages.

Chocolate Mothers Day Cakes



I thought I would share these photographs of two Mothers Day Cakes I made for this Year. The reason being that they use my chocolate cake and chocolate ganache recipes.

One has my chocolate cake recipe the other the chocolate almond cake recipe this is just another way to show the versatility of this great cake.

I know it is too late to make these for Mothers Day this year but I am just inspiring you to use it as a base for your next decorated cake. A tip is to bake it the day before you plan to decorate, this will make it easier to layer and ganache.

My new white chocolate cake recipe also works equally as well, combine this with the white chocolate ganache recipe and you are on a winner.


Subscribers only recipe – White Chocolate Ganche Ideas plus Lemon Butter Recipe



White chocolate ganache can be used in many ways. Let it set and roll and you have truffles, pour it over a cake while still warm and you have a beautifully chocolate enrobed cake.

On these lemon tarts I have poured it on still warm and let it cool till it is thick enough to beat then pipe. The pastry bases are easy to make using your favourite sweet short crust pastry or store bought. Bake the pastry shells and leave to cool. Then fill with delicious lemon butter and top with white chocolate ganache. I made the flower and heart decorations out of ready to roll icing the night before so that they had time to dry.

I have given you my recipe for lemon butter below. I have been making this and giving it as gifts for many years. I love to make it in the microwave it is so quick and simple.

Ingredients

  • 120g unsalted butter, melted
  • 2 cups caster sugar
  • 7 eggs, lightly beaten
  • 2 tablespoons lemon zest, finely grated
  • 1 cup lemon juice

 

Using a whisk combine all the ingredients in a large microwave safe bowl.

Cook on high for three minutes. Remove and whisk gently. When you are whisking you are justing trying to blend until smooth not aerate the lemon butter.

Cook on high for two minutes. Remove and whisk gently.

Cook on high for one minute. Remove and whisk gently.

Continue this in one minute intervals until the lemon butter has thickened. This will take approximately 8 minutes.

If you plan to give this as gifts then fill into hot sterilised jars and seal. If not pour into a container and leave to cool before covering.

The lemon butter will keep 10 days if refrigerated.

I have also used this lemon butter as layers in the white chocolate cake and then topped it with the white chocolate ganache. The sweetness of the ganache is balanced by the tart lemon filling.
